Freeze dried Ice Cream should be treated the same way as you would treat a bag of potato chips. Left open to the elements they can absorb moisture from the air making them loose their crunch and freshness. 

Best to consume within 7 days of opening. Reseal after opening and store
in a cool, dry place out of direct sunlight. Freeze Dried food has a very long shelf life, up to 25yrs when stored correctly. For long term storage, REMOVE from packaging ASAP and store in airtight container with a fresh
OXYGEN absorber. Left in its packaging will reduce its potential shelf life

This process can take up to 30 hours depending on the moisture content of the candy being freeze-dried.  Not all candy reacts the same.
